A-Z of unusual ingredients: Espelette pepper
Preparations are well underway for the 46th Espelette Pepper Festival. Harvest starts in September. Once picked, families string the peppers into ristras. They’re then hung to dry from balconies and gates and gutters for a month, dressing the houses throughout the French-Basque town in red-pepper-chains which flutter in the late-summer breeze.
