It’s afternoon and Le Chateaubriand is empty except for a few workers. Inaki Aizpitarte, wearing jeans and a chef’s shirt, is giving orders, planning and organizing what will be served that evening. This famous chef, who presides over an acclaimed and sought-after restaurant, actually started his career in Tel Aviv, in the late ’90s. “I flew to Tel Aviv and I didn’t have any money,” he says. “I planned to work and save money and keep traveling, but I didn’t find work in my field, which was gardening.
